Vanguard Mixologist Stefan Trummer’s off the cuff theory of
cocktail-making all began at his parent’s restaurant in Austria. With a
family history in the restaurant business dating back over 100 years,
Stefan quickly learned the ropes of both the front and back of the house,
eventually discovering his enthusiasm for mixing cocktails behind the bar.
With a strong passion to experience the world, Stefan left home in Austria
to travel throughout Europe to experience the unique variations and
flavors different countries embodied. Stefan researched celebrated
mixologists who were responsible for creating the cocktail culture in the
sixties and seventies in Europe. Stefan eventually ended up in New York
City after crafting cocktails at prestigious restaurants in Austria and
Bermuda.
Word in New York spread about this Austrian’s use of fresh ingredients and
twist on the conventional cocktail. When renowned chef David Bouley began
his search for an innovative mixologist to build a grandiose bar menu at
his restaurant Bouley that would equal the quality and creativity of his
cuisine, David placed his faith in Stefan. Stefan went on to formulate
menus for upscale eateries including Bouley, Bouley Upstairs, Citarella,
and Masa receiving high acclaim throughout multiple publications in New
York. The culmination of Stefan’s experience occurred when he opened his
own restaurant and bar, Trummer Home, with his brother Albert, in Long
Island. Most recently Stefan is working with Nicole Farhi’s restaurant
“202” where his inimitable creations forced the restaurant to purchase
more bar stools.
In addition to the laundry list of prestigious restaurants, Stefan
consults for liquor and wine companies including brands Moet, Kahlua,
Belvedere and many more. Stefan and his brother Albert took Navan to Miami
for the MTV Video Music Awards after party as well as other promotional
parties throughout Miami. Stefan has also crafted specialty cocktails in
2004 for Red Bull’s owner, Dietrich Mateschitz, for his one of a kind
exclusive glass enclosed restaurant, Hanger 7 in Austria which was visited
by many celebrities and VIP’s from all over the world. Stefan created the
cocktails while celebrity chefs from all over the world, including Gray
Kunz and Jean Georges, took turns creating a menu for the restaurant.
Stefan has also consulted for numerous bars including Tommy Tardie’s most
recent nightclub Ultra in New York City, designing a revolutionary bottle
service concept. At each VIP table, a personal cocktail valet will create
and serve unconventional cocktails with herb and flavor mixtures rarely
used in beverages. In addition, Trummer has created “Ultra Essences” to
enhance a guest’s liquor bottle with exotic infusions, such as Ruby Red
Grapefruit or Sicilian Mandarin.
Stefan Trummer’s unconventional cocktails have been featured in
publications around the country including The New York Times, Food & Wine,
The Wall Street Journal, Time Out New York “Eat Out Awards,” The New York
Post, New York Magazine, Private Air Magazine, Food Art Magazine,
Departures Magazine, Market Watch and Kateigaho (Japan’s Art and Culture
Magazine). Stefan was named by Time Out New York as one of the top 10 bar
chef’s whose drinks you should have had and was most recently named one of
the Top 10 Bar Chefs to watch by Beverage Media.
